2 cups riced cauliflower, steamed
¼ cup cocoa
¼ cup nut butter
¼ cup honey
1 teaspoon vanilla
1 15 oz. can coconut cream (no liquid)
1. In a blender, combine all ingredients until smooth and creamy.
2. Eat immediately or chill to thicken. Store in the refrigerator and enjoy as pudding (or use as a kid-friendly fruit dip).
